Warrior Nun ends on a cliffhanger, sadly. I haven't watched it all (I hit a point during the first season where the only thing I liked were Mary and her shotgun and stopped watching, but I pulled up the last episode to check the cliffhangeriness out of curiosity), so I don't know if it's the sort of satisfying cliffhanger that can be taken as an ending.
I loathed Knives Out, so I didn't bother giving Onion a try at all (I have gotten soooo picky as I've aged).
Sandman is more of a linear anthology than one story stretched out? Some of the episodes may drag while others might work.
