Anyone got any good fudge recipes? Links or actual recipes would definitely be appreciated.

I have a very easy fudge recipe that requires no candy thermometer or anything... it's basically just a bag of chocolate chips, vanilla, and sweetened condensed milk. I can look it up for you, if you like, or are you looking for something more fancy?

Non-fancy is fine! I don't want too complicated, so no thermometer = happy Rose.

I had this on my flist the other day from [livejournal.com profile] rhienelleth:

San Francisco Fudge (called so because it came off a Ghirardelli box)

* 2 1/4 C Semi-Sweet Chocolate Chips
* 14 ounce can sweetened condensed milk
* 1 C miniature marshmallows
* 1 1/2 tsp vanilla
* 1 C chopped walnuts (optional)

Melt everything in a pan together until rich and smooth, then pour it into whatever dish you want it to harden in.

I am not much of a fudge eater so I didn't make it, but it certainly seems like it should end up yummy. :)

Hey you. Apparently I can't resist a fudge request. If you're interested in peanut butter fudge, I have a no-fail, super-easy recipe that has pleased everybody I've ever fed it to. ;) You just take a cup of butter and a cup of peanut butter and microwave them for 4 minutes (usually best to stir in the middle), then add about a teaspoon of vanilla and almost a pound of powdered sugar, mix and let cool to set. You can even do it all in the same dish (I usually use a square glass pan). Seriously, it's ridiculously amazing and the consistency is good, too--smooth and slightly flaky but not dry.
